An Ji White's emerald green infusion represents some of the best teas in a completely new class of production. The straight leaves produce a lasting fragrance that is both unique in taste as well as its lack of caffeine content. An Ji is in ZheJiang Province of China, the home of bamboo, where the famouse film "crouching tiger and hidden dragon" was shot. It is an old county and has a history of 1,800 years. Anji is synonymous with bamboo,containing as it does 60,000 hectares of bamboo groves. It has been designated a pilot county for ecological construction. Within its boundaries are mountains and gullies, lush with forests and vegetation. The air is fresh and the river water is crystal clear. An Ji white tea is unusual from other teas that the spring bud is tender and presents a white color. It turns to whole white in middle April and return gradually to green in May. The folks call it as "Fairy Grass Tea" and local people treats the spring tea as "Holy Ghost", often adopted to cureillness. An ji White Tea is with a sweet fresh grass fragrance and a lively citrus flavour. The tea has complex and intriguing floral aromas. The taste is vivacious and exuberant combine sweet flavour. Anji White tea is with the amino acid content in variety 5~10.6%, twice or thrice as much as in the common green tea. Benefits of Anji White tea: As with other types of green tea, Anji white tea, with small amount of tea poly-phenol, contains the largest amount of amino acid among all teas, that's why it only has slight bitterness but with strong health-caring efficacy. Anji white tea is able to help control high blood pressure, lower the blood sugar level. However, the most significant compound found is catechin and research has shown green tea still retain about 50 to 75% of the good compound even after processing. The Chinese drink Anji white tea during hot weather e.g during spring and summer for its cooling effect to the body.. The tea contains vitamin C, amino acids, and, like most finer Chinese green teas, has one of the highest concentrations of catechins among teas. How to Brew Anji white tea Green Tea: 1. Rinse tea cup and teapot with hot water. 2. Use about 3.5 - 7 grams of tea leaves (2-3.5 teaspoons) for every 225 ml of water. 3. Steep tea leaves in hot water at 70°c (158°F) to 80°c (176°F) for 1 minute for the first and second brewing. 4. Gradually increase steeping time and temperature for subsequent brewing. 5. Refill when glass is still 1/3 full. Storage: Protect against the tide, peculiar smell, keeps in low temperature and refrigerates it.
